The Au Co Luxury Cruise reveals new culinary delights from leading French Chef
Leading Halong Bay cruise operator Bhaya Group has hired Master French Chef, Andre Bosia, to head the culinary team of the recently renovated The Au Co cruise.
Working closely with Bhaya Group, Chef Andre Bosia has created an entirely new onboard menu featuring local ingredients prepared in classical French and Vietnamese styles to offer unique fusion dishes that embody the coastal regions on Northern Vietnam.
Known for his extensive 25 years of experience in 5-star hospitality venues and Michelin-starred restaurants, including Sofitel Plaza Hanoi, Hotel Metropole Hanoi, and Sofitel Wentworth Sydney, the Master French Chef joins The Au Co cruise as a consultant as the cruise operator not only reveals new dining concepts but refurbished vessels and extended itineraries options.
As guests glide through the striking UNESCO World Heritage site of Halong Bay on a three-day cruise, they’ll have the opportunity to select their preferred main course, either a Vietnamese or French dish, during meals as well as enjoy themed dinners designed to satisfy both one’s senses and appetite.

On the first evening of the cruise, guests are warmly welcomed with a traditional Vietnamese dance together with live performances of Lac Long Quan and the Au Co tale, representing the concept and name of the ship, along with dishes created to match the theme of the evening. For dinner the second night, guests can unwind on the ship’s sundeck with a specially organized barbecue showcasing a variety of local seafood.
The new signature dishes aboard The Au Co cruise don’t just offer guests sumptuous cuisine at sea but also emphasize utilizing only the finest fresh produce and supporting organic farming practices. Committed to sustainability and providing responsible tourism experiences through the Gulf of Tonkin, The Au Co cruise maintains its own organic farm in Viet Hai Village on Cat Ba Island from which the onboard restaurant sources much of its produce.
